A Tale of the Seas

A nautical take on Commander Bond’s notorious creation, the Vesper Martini.

Dry vermouth is infused with Colchester rock oyster shells to give fresh salinity, then stirred down with Bombay
Sapphire London dry gin and a homemade tincture of vodka, samphire and Kalamata olive.

Fresh blended herb oil is dotted on the surface of the finished cocktail, and a single giant Gordal olive plays
the part of a pearl, sitting alongside the drink on an oyster half-shell.​

Body Art

Inspired by the work of the legendary tattoo artist, Norman “Sailor Jerry” Collins.

A broad brush decorates the coupe glass with a swoosh of gold edible paint, over which is poured a seductively smooth mix of Absolut vodka, lychee juice and our house SPT cordial, featuring fresh strawberries, pomegranate seeds, aromatic tarragon and citrus.

Garnished with an old school design that Jerry himself would have been proud of.

​Hot Honey Hornito

A whisper of Del Maguey Vida Puebla mezcal gives our new spicy marg a smoky edge.

Altos Reposado Tequila forms the body of this one, along with lime and piquant hot honey, all shaken and
strained over ice in a rocks glass rimmed with a blend of fragrant garam masala and smoked salt.

The final touch is added by burning a pinch of hickory wood chips over the top of the drink, which gives an
unmistakably smoky aroma.
